- 1 small yellow zucchini/courgette
- 1 small green zucchini/courgette
- 1 small carrot
- 3 eggs
- 1 sprig fresh thyme
- 3 tbsp water
Rinse vegetables. Cut off both ends. Using the Mando Junio, slice the vegetables into lasagna layers. Arrange the slices in the Healthy Delight base. Pour 1 tbsp / 15 ml water, cover and cook in the microwave oven for 5 minutes at 900 watts.
Beat the eggs and the remaining water in the EZ Shaker 350 ml.
Pour egg mixture over the pre-cooked vegetables, from the outside moving inwards to the center.
Cover and cook in the microwave for 5 minutes at 360 watts.
Let stand for 5 minutes before eating or serving cold with a green salad.
