Spring Vegetable Flower Frittata

SERVES 3 Persons  PREPARATION TIME 10 min.
COOKING TIME 10 min. STANDING TIME 5 min. 

INGREDIENTS

  • 1 small yellow zucchini/courgette
  • 1 small green zucchini/courgette
  • 1 small carrot
  • 3 eggs
  • 1 sprig fresh thyme
  • 3 tbsp water

METHOD

  1. Rinse vegetables. Cut off both ends. Using the Mando Junio, slice the vegetables into lasagna layers. Arrange the slices in the Healthy Delight base. Pour 1 tbsp / 15 ml water, cover and cook in the microwave oven for 5 minutes at 900 watts.

  2. Beat the eggs and the remaining water in the EZ Shaker 350 ml.

  3. Pour egg mixture over the pre-cooked vegetables, from the outside moving inwards to the center.

  4. Cover and cook in the microwave for 5 minutes at 360 watts.

  5. Let stand for 5 minutes before eating or serving cold with a green salad.
