Raspberry Muffins

SERVES 6 Persons PREPARATION TIME 10 min.

INGREDIENTS

  • 1 cup self-raising flour
  • 1/3 cup caster sugar
  • 1/2 tsp vanilla
  • 1 extra large egg
  • 60 g butter, melted, cooled slightly
  • 1/3 cup cream, milk or buttermilk
  • Handful of raspberries (about ¾ cup)

METHOD

  1. Preheat oven to 180°C (160°C fan). In a Mixing Bowl, combine flour and sugar together. Add vanilla, egg, butter and cream. Mix with a Tupperchef® Medium Spatula until just combined. Gently stir through raspberries. 

  2. Spoon mixture evenly into a TupperChef® TupCakes Form. Bake for 20-25 minutes until golden and cooked. Stand in form for 15 minutes, or until slightly cooled. Gently un-mould onto a wire rack to cool.
