Micro Pressure Cooker Pasta e fagioli

INGREDIENTS

  • 1 large carrot,
  • 1 shallot,
  • 1 stick celery,
  • 425 g can red kidney beans
  • 1/2 cup chopped bacon
  • 1 cup medium past shells
  • 800 g can diced tomatoes
  • 1 cup water
  • Optional Parmesan rind
  • 1 zucchini

METHOD

  1. In base of Microwave Pressure Cooker, add all ingredients including Parmesan rind (if using) except zucchini. Lock in cover. 

  2. Microwave on high power/100%/900 watts for 15 minutes. Stand until pressure indicator drops, then remove cover. 

  3. Add zucchini and stir to combine. Serve warm.
