Easy Vanilla Cupcakes

SERVES 12 Persons  PREPARATION TIME 10 min.
COOKING TIME 18 min. 

INGREDIENTS

  • 2 cups self-raising flour
  • 3/4 cup caster sugar
  • 2 extra large eggs
  • 1 tsp vanilla extract or essence
  • 3/4 cup milk
  • 125 g butter, very soft or melted,
  • Icing, frosting or fondant and sugar decorations

METHOD

  1. Preheat oven to 180◦C (160◦C fan).  Place two TupperChef™ TupCakes Forms onto a large baking tray or two separate trays.

  2. Place flour and sugar into a Thatsa® Bowl Junior. Add the eggs, vanilla, milk and butter. Whisk with a KP Beater until smooth.

  3. Measure 1/3 cup batter into each of the holes of the forms. Bake for 18-20 minutes, or until they bounce back when touched in the centre. Remove, stand 5 minutes then gently invert out. Cool completely on a rack before icing and decorating.

  4. If using fondant, roll out on surface lightly dusted with sifted icing sugar. Cut shapes with cutters. Dissolve a little fondant in a small jug or bowl in some boiling water. Use this to brush onto cupcakes to stick fondant onto the cakes. Decorate as you wish.

    ALTERNATIVE RECIPE

    The below recipe is an easy way to make cupcakes especially for kids - if you want to make your own Cupcake Mix to keep on hand. The mixture can be stored in a Modular Mate container. This amount will make 24 standard-sized cupcakes.

    STEP 1: Vanilla Cupcake Mix

    • 6 cups self-raising flour, sifted
    • 3 cups caster sugar
    • 65g jar vanillin sugar *
    • 1 teaspoon salt

    INSTRUCTIONS

    Combine in a Modular Mate Square 2#. Place seal firmly on top and shake to mix well.  For a gluten-free version-substitute Gluten-free self-raising flour. To make up gluten-free cupcakes - use 2 cups of the mix and add 1 cup ground almonds or desiccated coconut. Add butter, eggs and milk as listed below.

     

    STEP 2: Vanilla Cupcakes

    Preparation Time: 10 minutes
    Cooking Time: 20 minutes plus decorating time
    Makes 12

    • 3 cups cupcake mix
    • 125g butter, very soft or melted, cooled
    • 2 extra-large eggs
    • 1 1/3 cups milk

    INSTRUCTIONS

    1. Preheat oven to 180◦C fan (160◦C fan). ).  Place two TupperChef™ TupCakes Forms onto a large baking tray or two separate trays.
    2. Place cupcake mix into a Thatsa® Bowl Junior with the butter, eggs and milk. Whisk with a KP Beater until smooth.
    3. Measure 1/3 cup batter into each of the holes of the forms. Bake for 18-20 minutes, or until they bounce back when touched in the centre. Remove, stand 5 minutes then gently flip out. Cool completely on a rack before icing and decorating.

    *vanillin sugar is located in the spice aisle of supermarkets

     

    VARIATIONS: Chocolate Cupcake Mix

    • 5 cups self-raising flour
    • 1 cup cocoa powder
    • 3 cups caster sugar
    • 65g jar vanillin sugar *
    • 1 teaspoon salt

    INSTRUCTIONS

    1. Sift flour and cocoa into a Modular Mates Square 2#.
    2. Add remaining ingredients.
    3. Place seal tightly on top and shake to mix well.
