Apple Cinnamon Scrolls (no yeast)

SERVES 12 Persons  PREPARATION TIME 20 min.
COOKING TIME 20 min. 

INGREDIENTS

DOUGH
  • 2 cups self-raising flour
  • 75 g butter, cut into small dice
  • 3/4 cup plain yoghurt
  • 1/3 cup brown sugar
  • 1 apple, very finely chopped
FILLING
  • 60 g butter, very soft
  • 2 tbsp tablespoons brown sugar
  • 1 tsp ground cinnamon
GLAZE
  • 1/3 cup maple syrup
  • 2 tbsp brown sugar
  • 40 g butter, diced

METHOD

  1. Preheat the oven to 200◦C (180◦C fan). Place Tupperchef™ Large Baking Sheet onto a baking tray. Place flour in a Thatsa® Bowl Junior. Rub in the butter until the mixture looks like fine breadcrumbs. Add the sugar and a pinch of salt. Stir in the yoghurt with a TupperChef™ Medium Spatula.  Use your hands to bring the mixture together. Tip onto a lightly floured surface and knead briefly into a ball. Rest while you make the filling. 

  2. Combine filling ingredients in a small bowl or jug.  

  3. Roll dough out on a lightly floured surface into a 27cmx 40cm rectangle. Spread with filling mixture. Sprinkle over apple. Roll up from the long end. Cut into 12 scrolls.  Place on Baking Sheet next to each other. Bake for 15-20 minutes until golden and firm.

  4. Mix glaze ingredients in a MicroCook Pitcher. Heat on high/100% power/900 watts for 60 seconds, or until sugar has dissolved. Stir until smooth. Spoon over scrolls.

    TUP TIP: They are best eaten on the day they are made.
