Simple Microwaveable Shepherd's Pie

INGREDIENTS

  • 900g potato (± 31.7 oz.)
  • 4 tbsp instant dry milk (± 60ml)
  • 2 egg yolks
  • 1 tsp salt (± 5 ml) adjust to taste
  • 1/2 tsp white pepper (± 2.5 ml)
  • 1/2 tsp ground nutmeg (± 2.5ml)
  • 125 g cheddar cheese grated with Handy Grater
  • Chicken and Veggie Filling
  • 1 tbsp olive or vegetable oil (±15 ml)
  • 1/2 onion (minced)
  • 2 garlic cloves (minced)
  • 200g skinless and boneless chicken thighs (± 7 oz.) cubed
  • 150g frozen mixed vegetable (carrots, green peas and corn) (± 5 oz.)
  • 1 tsp salt (± 5 ml) adjust to taste
  • 1/4 tsp white pepper (± 1.25ml)
  • 1/4 tsp sugar (± 1.25 ml)
  • 50g glass noodles (± 2 oz.) soaked in hot water and drained
Egg Wash
  • 1 egg yolk (add a few drops of water if too thick)

METHOD

  1. Boil potatoes to desired softness and drain.
  2. In 2 batches, add potatoes to the base of the SuperSonic Extra, fitted with blade. Cover and pull cord until mashed to desired consistency.
  3. Using the Silicone Spatula, combine mashed potato, instant dry milk, egg yolk, salt, white pepper, nutmeg, and the grated cheese in a Tupperware Mixing Bowl.
  4. Divide mixture into 2 equal portions and set aside.
  5. To make the filling, heat olive oil in a Chef Series Fry Pan. Add minced onion and garlic. Sauté until fragrant.
  6. Add cubed chicken, sauté until half cooked. Add frozen mixed vegetables.
  7. Season with salt, white pepper, and sugar. Mix well.
  8. Add glass noodle and stir. Set aside
  9. Using the Large Spatula layer one portion of the potato filling in the base of the MicroPro Grill.
  10. Top the mashed potato mixture with the chicken and veggie filling spread across evenly, creating a layer.
  11. Use the Silicone Brush to brush egg wash on the potato mixture. Place the MicroPro Series Grill cover in the grill/low position and microwave for 15 – 20 min.

TupperTips:

  • Substitute the chicken for minced lamb for a classic Shepard’s pie.
  • For quicker process, instead of boiling your potatoes, cut potatoes in small cubes and microwave with a small amount of water for about 10 min. (Adjust based on your microwave).
  • Add extra cheese in the mashed potato mixture for a cheesier version.
