- 100 g butter, softened
- 1/2 cup caster sugar
- 1/2 tsp vanilla extract
- 2 extra large eggs
- 3/4 cup plain flour
- 1/2 tsp baking powder
In a medium bowl, whisk butter, sugar and vanilla and a pinch of salt together for 30 seconds or until creamy. Whisk in eggs one at a time, then whisk in flour and baking powder until smooth.
Place the MicroPro Grill Ring in the base of the MicroPro Grill and pour mixture into the Ring. Place the cover in high position and cook in microwave on medium (650-700 watts) for 10 minutes.
Allow to stand for 5 minutes. Using oven mitts, remove cover and Ring. Place a plate or cutting board to the top of the MicroPro Grill and carefully flip. Cool cake on a rack. When cooled, turn right side up.
Add 1/4 cup of fresh or frozen raspberries or blueberries to the batter before cooking, or substitute 1/2 teaspoon of finely grated lemon in place of vanilla. Dust with sifted icing sugar.
