- 2 x 250g skinless chicken breast fillets, sliced evenly in half lengthways
- 2 tbsp plain flour
- 1 cup panko or dried breadcrumbs
- 1/2 cup grated parmesan
- 1/4 cup sesame seeds
- 1 1/2 tsp garlic salt
- 1 egg mixed with 1 tablespoon water, beaten
- Olive oil, for drizzling
- 2 bunches broccolini, ends trimmed
Lay chicken on a cutting mat or tray and sprinkle over half the flour. Turn and repeat with remaining flour.
Combine crumbs, parmesan, sesame seeds, garlic salt and some pepper in a medium bowl. Dip each piece of chicken into the egg and then into the crumb mixture, pressing to coat well.
Drizzle chicken with a little oil. Place two pieces, oil side down, into MicroPro® Grill. Drizzle with a little more oil. Place cover in low position and cook in microwave on high/100%/900 watts for 5 minutes. Flip and cook for an extra 2 minutes or until golden and crunchy. Set aside on a plate. Wipe out grill with paper towel and repeat with remaining chicken. Wipe out again. Place broccolini in MicroPro Grill, place cover in low position and cook for 5 minutes. Serve broccolini with chicken.
