Salmon Burger

SERVES 6 Persons  PREPARATION TIME 5 min.

INGREDIENTS

FOR THE SALMON BURGERS

  • 1 kg salmon (skinless)
  • 2 tbs chives, finely chopped
  • 1⁄4 cup dill, finely chopped
  • Salt and pepper
  • 1 tbs (20ml) olive oil, for frying

FOR THE AVOCADO MAYONNAISE

  • 1 large ripe avocado
  • 1/3 cup mayonnaise
  • Salt and pepper
  • 1⁄2 lime, juiced
  • 2 tbs coriander, finely chopped

TO SERVE

  • Burger buns, lightly toasted or grilled
  • 1⁄2 red onion (50g), thinly sliced
  • 1 Lebanese cucumber (150g), thinly sliced
  • Lettuce

METHOD

  1. Fit the Fusion Master with the Coarse Mincer Disc, and process the salmon into a mixing bowl.
  2. Add remaining burger ingredients to salmon and mix until thoroughly combined. Season generously with salt and pepper. Form into
  3. 6-8 burger patties.
  4. Pour oil into the Chef SeriesTM Pure Cookware 28cm Frypan and place over a medium heat. Add in patties (4 at a time), and cook for 3-4 minutes on each side or until cooked just cooked through.
  5. Meanwhile, place the paddle whisk attachment in the Smooth ChopperTM, add all mayonnaise ingredients; lock cover into position and pull the cord several times until contents are well combined and smooth.
  6. To serve, place salmon burgers in lightly grilled burger buns, top with thinly sliced red onion, cucumber, lettuce and the avocado mayonnaise.
