Quinoa, Orange & Mint Salad

INGREDIENTS
FOR THE DRESSING
1 tsp (5ml) pomegranate molasses
1-2 tbs (20-40ml) orange juice
1 tbs (20ml) olive oil
Salt and pepper
FOR THE SALAD
½ cup cooked quinoa
½ cup tinned chickpeas, drained and rinsed
½ cup kale, chopped
1 orange, peeled and sliced
2 tbs fresh mint, chopped
¼ tsp dried mint
2 tbs fresh pomegranate seeds
2 tbs pistachios, roughly chopped
METHOD
- Place all dressing ingredients at the bottom of the Quick Shake. Then, layer ingredients with cooked quinoa, chickpeas, kale, orange, mint, pistachios and pomegranate.
- Securely seal Quick Shake and store in the refrigerator until ready to serve.
- When ready to serve, shake Quick Shake until all ingredients are combined. Pour into Go Flex and serve.
