Quinoa, Orange & Mint Salad

SERVES 1 Persons  PREPARATION TIME 5 min.

INGREDIENTS

FOR THE DRESSING
1 tsp (5ml) pomegranate molasses
1-2 tbs (20-40ml) orange juice
1 tbs (20ml) olive oil
Salt and pepper

FOR THE SALAD
½ cup cooked quinoa
½ cup tinned chickpeas, drained and rinsed
½ cup kale, chopped
1 orange, peeled and sliced
2 tbs fresh mint, chopped
¼ tsp dried mint
2 tbs fresh pomegranate seeds
2 tbs pistachios, roughly chopped

METHOD

  1. Place all dressing ingredients at the bottom of the Quick Shake. Then, layer ingredients with cooked quinoa, chickpeas, kale, orange, mint, pistachios and pomegranate.
  2. Securely seal Quick Shake and store in the refrigerator until ready to serve.
  3. When ready to serve, shake Quick Shake until all ingredients are combined. Pour into Go Flex and serve.
