Pulled Beef Burger with Slaw Recipe

Nothing screams Aussie Summer more than a bbq with your mates. Crack out a cold one everyone is sure to be going back for seconds with pulled beef that tasty. Create the juiciest pulled beef burger with coleslaw at home. This one is sure to be a people pleaser!

COOKING TIME: 30 min

INGREDIENTS

  • 850g beef brisket or shoulder, roughly chopped into 12 x 7cm pieces
  • 1 (100g) small red onion, diced
  • 1 cup bourbon barbecue sauce
  • 1/3 cup maple syrup
  • 2 tsp smoked paprika
  • Salt and pepper

For the slaw

  • 1/8 red cabbage, thinly sliced
  • 1 apple, thinly sliced
  • 2 tsp wholegrain mustard
  • 2 tsp apple cider vinegar
  • 1 tsp maple syrup
  • Salt and pepper

To serve

  • 6 burger buns or 12 slider buns
  • Mayonnaise

METHOD

  1. Combine all beef ingredients in the Micro Pressure Cooker and generously rub sauce into the meat.
  2. Securely cover and lock the Cooker, microwave at 900 watts for 30 minutes. Remove Micro Pressure Cooker from microwave and allow to rest until the pressure indicator drops.
  3. In the meantime, combine all slaw ingredients in a Mixing Bowl.
  4. Once the pressure indicator drops, unlock and remove cover, remove meat, placing it on a platter. Gently pull the flesh into strips.
  5. Serve pulled beef in burger buns topped with slaw and mayonnaise.

Tupper Tip: If time permits leave meat to marinate in sauce overnight.
