Pineapple & Strawberry Slice



  • 85 g packet shelled, unsalted pistachios
  • 125 g butter, softened
  • 2/3 cup caster sugar
  • 2 extra large eggs
  • 1 tsp finely grated lemon rind
  • 1 cup self-raising flour
  • 1/3 cup plain yoghurt
  • 1/4 small pineapple, peeled and thinly sliced
  • 5 strawberries, hulled, sliced into three
  • Icing sugar, to serve


  1. Preheat oven to 180°C. Place blade attachment in Turbo Chef®. Add pistachios. Pull cord several times until finely chopped.

  2. Beat butter and sugar in Thatsa® Bowl Junior with electric beaters until pale and creamy. Add eggs, one at a time, beating well after each addition.

  3. Fold in lemon, flour, yoghurt and pistachios until just combined. Spread into TupperChef™ Large Rectangle Form and gently smooth top.

  4. Press pineapple and strawberries into top, bake for 40 minutes, or until golden brown. Stand for 10 minutes. Place wire rack on top of slice and gently flip and slide onto another rack to cool. Dust with icing sugar and slice to serve.
