2 rasher rindless bacon sliced 500g brussel sprouts 1.5 tbs olive oil 1 garlic clove crushed 2 tbs pine nuts
T rim bases of sprouts and halve length ways. Blanch in boiling water for 3-4 minutes or until just starting to soften.
Drain and refresh in cold water to stop them cooking further .
Heat oil in a frying pan over medium-high heat. Add garlic, bacon and pine nuts and cook for a few minutes until crisp and golden. Add sprouts and cook, tossing, for 2-3 minutes or until lightly browned
