Pan Fried Brussel Sprouts

INGREDIENTS:

  • 2 rasher rindless bacon sliced
  • 500g brussel sprouts
  • 1.5 tbs olive oil
  • 1 garlic clove crushed
  • 2 tbs pine nuts

METHOD:

  • Trim bases of sprouts and halve length ways.
  • Blanch in boiling water for 3-4 minutes or until just starting to soften.
  • Drain and refresh in cold water to stop them cooking further.
  • Heat oil in a frying pan over medium-high heat. Add garlic, bacon and pine nuts and cook for a few minutes until crisp andgolden. Add sprouts and cook, tossing, for 2-3 minutes or until lightly browned
