Classic Mac N' Cheese Recipe

INGREDIENTS

 

  • 250g (2 cups) elbow macaroni or your preferred pasta shape
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups milk (whole milk works best)
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese (optional for added creaminess)
  • ¼ tsp mustard powder (optional for depth of flavor)
  • Salt and pepper to taste
  • Optional: ¼ cup breadcrumbs for a crispy topping

    INSTRUCTIONS

    1. Cook the macaroni pasta in salted boiling water according to package instructions until al dente. Drain with colander and set aside.
    2. In a medium saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously for 1-2 minutes to form a smooth paste. Stir the roux with a spatula or whisk. This step removes the raw flour taste.

    3. Slowly pour in the milk while whisking to ensure a smooth mixture. Continue to cook, stirring constantly, until the sauce thickens and coats the back of a spoon (about 5-7 minutes).

    4.  Lower the heat and gradually add the shredded cheeses, stirring until melted and smooth. Add the mustard powder if using, and season the sauce with salt and pepper to taste. 

    5. Add the cooked macaroni to the cheese sauce, stirring gently to coat each piece evenly.

    6.  Preheat the oven to 200°C (400°F). Transfer the mac and cheese to a greased baking dish. Sprinkle breadcrumbs over the top and bake for 10-15 minutes until golden and bubbly.
