Broccoli Fritters

SERVES 8 Persons  PREPARATION TIME 10 min.
COOKING TIME 15 min. 

INGREDIENTS

  • 1 head broccoli (300g), excess stalks trimmed
  • 2 cloves garlic
  • 3 extra large eggs
  • 1/2 cup grated parmesan
  • 1/2 cup self-raising flour
  • Olive oil

METHOD

  1. Place a third of the broccoli into an Extra Chef fitted with triple blade attachment. Lock in the cover, pull the cord several times and blend until finely chopped. Add more broccoli, repeat until all is finely chopped. Season with salt and pepper. Add remaining ingredient and blend to combine. Remove the cover and stir so all the ingredients are combined.

  2. Heat a Chef Series II 28cm Fry Pan on medium. Drizzle in some oil. Place four x ¼ cupfuls of mixture into the fry pan.  Cook for 3-4 minutes, turning half way through until golden and firm. Remove and keep warm. Repeat. Serve with sour cream and salad or in a burger.

    Tip: Try substituting cauliflower for the broccoli. You can substitute gluten free self raising flour for the self raising flour.
