Beef and Ricotta Lasagne with Zucchini

SERVES 8 Persons  PREPARATION TIME 15 min.
COOKING TIME 45 min. 

INGREDIENTS

  • 1 tbsp olive oil
  • 1 kg lean beef mince
  • 2 700g jars good quality tomato pasta sauce
  • 1/2 cup wine
  • 1 kg smooth ricotta
  • 3 cups grated pizza chees, plus extra for sprinkling
  • 1 large zucchini
  • 250 g packet fresh lasagne sheets (6 sheets)
  • fresh basil, to serve

METHOD

  1. Heat oil in a large fry pan or casserole dish. Brown mince, stirring constantly. Add pasta sauce and wine, simmer, uncovered, for 10 minutes. In a medium bowl, combine cheeses with some salt and pepper.

  2. Place ½ cup of tomato sauce on base of Ultra Pro™ 3.3L Rectangle. Top with
    two lasagne sheets. Spoon over half of the sauce followed by a half of the sliced zucchini and a third of the cheese mixture.

  3. Repeat layer. Arrange over last two lasagne sheets followed by remaining cheese mixture. Cook in microwave on high/100%/900watts for 15 minutes. Preheat oven to 200˚C conventional/180˚C fan. Toss extra zucchini with some oil, salt and pepper, place in UltraPro cover.

  4. Sprinkle lasagne with extra cheese, place lasagne into oven on centre rack. Place zucchini on lower rack and cook for 10-15 minutes, until lasagne and zucchini have browned. Serve with basil.
