Microwave lemon delicious
INGREDIENTS
4 eggs, separated
45g butter, softened
½ cup caster sugar
1 tbs lemon zest
½ cup plain flour
½ cup self raising flour
¾ cup milk
½ cup lemon juice
½ cup toasted coconut (see note)
METHOD
1. Insert paddle attachment in the Quick Chef II and cream egg yolks, butter, sugar and zest until light and fluffy.
2. Sift flours and add to Quick Chef II with milk and lemon juice. Turn until well combined.
3. In the Bake 2 Basics Shake It Quick shake egg whites until soft peaks form.
4. Remove paddle attachment and using the TupperChef Spatula gently fold egg whites into batter until well combined.
5. Pour mixture into the TupperWave® Stack Cooker base and sprinkle with toasted coconut.
6. Cook uncovered in the microwave on low (350 watts/30%) for 6 minutes.
7. Serve immediately with cream or icecream.
Kitchen Note
Toast coconut in a frypan over a low heat, stirring constantly with the TupperChef Spatula until golden brown. Set aside to cool. Cooled toasted coconut is a handy cake decoration that can be stored in your Modular Mates until required.
