MICROWAVE CARROT CAKE
WITH WHITE CHOCOLATE FROSTING

Ingredients
200g margarine, softened
250g dark brown sugar
3 eggs
1 orange, zest and juice
½ tsp each ground cinnamon, nutmeg & ginger
350g carrots
175g self-raising flour
100g ground almonds
100g light cream cheese
50g icing mixture
100g white chocolate, melted and cooled
½ cup chopped walnuts
double cream and berries, to serve
Method
1. Beat margarine and brown sugar in the Quick Chef II with the mixing paddle attachment until light and creamy, then beat in eggs, zest, juice and spices.
2. Peel carrots with the Twistable Peeler, then julienne with the Bake 2 Basics Slicer System over the Bake 2 Basics 3.5 Litre Mixing Bowl.
3. Gently fold in the carrot, flour and almonds with the TupperChef™ Spatula.
4. Spoon cake mixture into the TupperChef Kugelhopf Form with the Spatula. Cover with a plate and microwave on High (800 watts) for 9 minutes, until a skewer can be inserted and removed cleanly. Set aside to cool for several minutes.
5. Meanwhile, combine cream cheese and icing mixture in the Quick Chef II with the mixing paddle attachment and beat until light and creamy. Add melted chocolate and beat until smooth. Spoon icing over cooled cake with Kids’ Kitchen Mixing Spoon.
6. Garnish with walnuts. Serve with double cream and berries.
